Grated lemon zest

Zest taken off the fruit in fine shreds with a microplane and scattered over the surface, rather than a strip expressed above it. Use it where the zest is meant to be eaten with the drink instead of smelled over it.

Take only the coloured layer. The white pith beneath it is bitter, and on a grater it is easy to go through into it without noticing.
