Lemon spiral
Half the fruit or the whole of it, pared in one unbroken ribbon and used as part of the serve: lining the inside of the glass in a Brandy Crusta, hanging over the rim in a Horse's Neck.
Cut it with a knife or a peeler in one continuous stroke, turning the fruit as you go. A break means starting again, so work slowly and take the coloured layer only - a ribbon carrying pith will sit against the drink for as long as it lasts.
This is not a twist. Nothing is expressed; the peel is there for the shape and for what it gives up slowly.
