Agave syrup

Agave nectar diluted one to one with warm water, so it pours and mixes cold. Neat from the bottle it is thicker than honey and will not dissolve in a shaker.

The nectar itself is agave juice broken down into sugars and concentrated, and there is no home version, so buy 100% blue agave, the tequila plant, with nothing added; light or amber for a blanco drink. Every measure on this site means the diluted syrup, which is the convention of the Tommy's Margarita, the drink that made it a cocktail ingredient.
