Añejo tequila
Tequila aged one to three years in oak barrels of 600 litres or less, which carries it toward whisky: caramel, dried fruit and oak, with the agave still underneath. Sipped more often than mixed, and at home in a stirred drink that would otherwise take a whiskey.
Extra añejo, aged three years or more, is rarer still and rarely mixed.
