Tequila

Spirit distilled from blue agave in Jalisco and four neighbouring Mexican states. Five official classes, set by how long it rests in oak: blanco is unaged or rested under two months, reposado two months to a year, añejo one to three years in small barrels, extra añejo longer still, and joven a blanco with colour and flavour added. A recipe that says only tequila means blanco.

Made from 100% agave or, as a mixto, from at least 51% agave with other sugars. The label says which, and it matters more than the class.
