Demerara sugar

Cane sugar stopped part-way through refining, so it keeps some of its own molasses: large golden crystals, tasting faintly of caramel. Sold in Sweden as råsocker.

It is the sugar an aged-spirit drink asks for by name - rum and whiskey have the same molasses and barrel notes to meet it with, where white sugar would only sweeten. Usually taken as a 2:1 syrup rather than as crystals, which dissolve slowly and gritty.

Not the same thing as brown sugar (Swedish farinsocker), which is refined white sugar with molasses stirred back in.
