Cherry Heering
Danish cherry liqueur, made in Copenhagen to an 1818 recipe and the bottle a cocktail usually means when it asks for cherry. Stevns cherries are crushed with their stones, which is where the almond note behind the fruit comes from, and it sits at least three years in oak before bottling at 24%.
Dark, thick and only just sweet. The cherry brandies sold beside it are usually thinner and sweeter, and in a drink that is a quarter cherry - the Blood and Sand, the Singapore Sling - that difference is most of the drink.
