Ramos Gin Fizz

Ingredients

Add everything except the soda to a shaker and dry shake (without ice) for a full minute.
Add ice and shake vigorously again
Strain into a chilled Collins glass and let it settle for a minute.
Pour soda slowly down the middle until the foam rises proud of the rim.

About 37.9 cl at 7%, equivalent to 6.5 cl of 40% spirit
