Heavy cream
Cream with 36% milk fat or more. Thick enough to float on a hot coffee, to hold a light whipping without turning stiff, and to shake into the texture a Ramos Gin Fizz is made of.
Sold as heavy whipping cream too - the longer label is the same thing. The British equivalent is double cream, which is richer still at around 48%. This is what a cocktail recipe means when it says cream.
